Broken Glass Cake
  • 1 package (3 oz.) orange flavored gelatin mix
  • 1 package (3 oz.) lime flavored gelatin mix
  • 1 package (3 oz.) red raspberry gelatin mix
  • 1 tbsp. unflavored gelatin
  • 4-1/2 cups hot water, separated evenly into 3 containers
  • 1/4 cup cold water
  • 1/4 cup boiling water
  • 1/2 cup pineapple juice
  • 1 pint heavy cream, whipped
  • 1 package (7-1/4 oz.) vanilla wafers
  • 1/2 cup sugar
  1. In three separate containers, dissolve each gelatin flavor in 1-1/2 cups hot water and let set. Soak unflavored gelatin in cold water, then add the boiling water. Stir until dissolved then add the pineapple juice and let set to cool and start to gel. Whip cream and gradually add the 1/2 cup sugar. Then add to cool but not gelled pineapple gelatin. Cut the flavored gelatins into small cubes and fold in. Crumb the wafers by placing in a plastic bag and rolling with a rolling pin. Use half of crumbs in the bottom of a 1-1/2 quart size oblong Pyrex dish or other container, add the gelatin mixture and top with remaining crumbs. Chill for a few hours.
