Brothy Shrimp & Rice Scampi

INGREDIENTS
  • 3 1/2 cups Chicken Broth
  • 3/4 cup uncooked regular long grain white rice
  • 1 tbsp. olive oil
  • 1 lb. fresh or frozen large shrimp, , shelled and deveined
  • 4 cloves garlic, , minced
  • 2 tbsp. lemon juice
  • 2 green onions, , thinly sliced (about 1/4 cup)
DIRECTIONS
  1. HEAT broth to a boil in medium saucepan over high heat.
  2. Stir in rice.
  3. Cover and cook over low heat 20 min.
  4. HEAT oil in medium skillet.
  5. Add shrimp and garlic.
  6. Cook 5 min. or until shrimp turn pink, stirring often.
  7. PLACE shrimp in 4 bowls.
  8. Stir lemon juice into rice mixture and pour over shrimp.
  9. Top with green onions.
