Brown Stew Chicken

INGREDIENTS
- 1 tbsp. oil
- 1/2 cup chopped onion
- about 3-4 tbsp. brown sugar
- 1 tsp minced garlic
- 1 scotch bonnet pepper
- 1 cup sweet peppers
- 1 cup of chicken broth or water
- 1 tsp of matouks pepper sauce (or any pepper sauce)
- 1 tsp salt and black pepper
- 1/2 cup chopped green onion
- 1 cup chopped parsley
- 1 cup chopped sweet basil
- 1 tbsp. rosemary
- 1/2 cup thyme
- 1 lime or lemon
- 2 bouillon cubes
- 1/2 tsp. ginger grated
- 1 whole chicken cut up
DIRECTIONS
- Season chicken with bouillon cubes, lime or lemon, thyme, rosemary, parsley, sweet basil, garlic, salt and pepper
- Let chicken marinate for some time (at least 1/2 hour)
- Heat oil in a large pot with sugar until browned
- Add chicken to browned sugar, stirring continuously until chicken is browned and coated
- Add sweet peppers, stir for about a minute.
- Add chicken broth or water, onion and scotch bonnet pepper and cover pot. Cook until chicken is fully cooked.
- Taste and adjust salt/pepper as needed.
