Brown Stew Chicken

INGREDIENTS
  • 1 tbsp. oil
  • 1/2 cup chopped onion
  • about 3-4 tbsp. brown sugar
  • 1 tsp minced garlic
  • 1 scotch bonnet pepper
  • 1 cup sweet peppers
  • 1 cup of chicken broth or water
  • 1 tsp of matouks pepper sauce (or any pepper sauce)
  • 1 tsp salt and black pepper
  • 1/2 cup chopped green onion
  • 1 cup chopped parsley
  • 1 cup chopped sweet basil
  • 1 tbsp. rosemary
  • 1/2 cup thyme
  • 1 lime or lemon
  • 2 bouillon cubes
  • 1/2 tsp. ginger grated
  • 1 whole chicken cut up
DIRECTIONS
  1. Season chicken with bouillon cubes, lime or lemon, thyme, rosemary, parsley, sweet basil, garlic, salt and pepper
  2. Let chicken marinate for some time (at least 1/2 hour)
  3. Heat oil in a large pot with sugar until browned
  4. Add chicken to browned sugar, stirring continuously until chicken is browned and coated
  5. Add sweet peppers, stir for about a minute.
  6. Add chicken broth or water, onion and scotch bonnet pepper and cover pot. Cook until chicken is fully cooked.
  7. Taste and adjust salt/pepper as needed.
