Bubba Shrimp Scampi
  • Servings: 4-6
  • 3 tablespoons of butter
  • 1 clove garlic, minced
  • 2 tablespoons of sliced green onions
  • 1 lb. large shrimp, shelled & deveined
  • 1 tablespoon of lemon juice
  • zest of one lemon
  • 1/4 teaspoon of crushed red pepper flakes
  • 1/4 teaspoon oregano
  • 1/4 teaspoon of salt
  • 1 tablespoon of capers
  • 4 tablespoons of dry white wine or sherry
  • 1/4 cup grated Parmesan cheese
  1. Saute garlic and green onions in butter. Add shrimp, lemon juice, lemon zest, red pepper flakes, oregano and salt over medium high heat stirring constantly until shrimp are pink. 3-5 minutes.
  2. Stir in wine and capers. Serve over linguine or fettucine. Sprinkle grated Parmesan cheese over top.
This is everyone's favorite pasta dish. It doesn't hurt to love seafood, especially shrimp. If I was stranded on a deserted island (with Tom Hanks) and could only have one food ingredient? Definitely SHRIMP! Or was that crab?
