Buklarewicz's Sole Fillets

INGREDIENTS
  • 2-4 Sole Fillets
  • 1/2 cup of flour
  • Seasoning- salt & pepper
  • 1/4 cup of fresh lemon juice( can add more depending on your taste)
  • 2-3 Tbsp. Chopped fresh (flat) Parsley
  • 1/2 cup of dry white wine
  • 6-8 cherry tomatoes
  • 1 Tbsp capers
DIRECTIONS
  1. Mix the flour w/ seasoning in a shallow dish
  2. Dredge the fish fillets in the flour mixer
  3. Heat a large skillet / pan add butter & good quality Olive oil to cover the pan
  4. Sautee the fillets on high heat 2 minutes on each side- then transfer on to a warm plate.
  5. Sautee the white chopped onions- light golden color
  6. Add- 1/4 or 1/2 cup of dry white wine - reduce to half
  7. When sauce has reduced add 1/4 cup lemon & 1 tbsp. capers
  8. Add 6-8 halves of cherry tomatoes - Sautee for 1 minute
  9. Then add the fish back onto the pan for 1 minute to warm up & garnish with chopped parsley
  10. Serve immediately

I made this for my mom recently and served it with boiled potatoes, butter & chopped parsley and served with asparagus.
