Bulgar Healthbreak Honey Wheat Bread

  • 1 & 1/2 cups boiling water
  • 1/2 cup dry bulgar wheat
  • 1/2 Tablespoon salt
  • 1 & 1/2 Tablespoon extra virgin olive oil
  • 1/4 cup honey
DIRECTIONS
  1. Combine the above in kitchenaide mixing bowl and slowly whisk to combine.
  2. Allow mixture to set until it has cooled to lukewarm.
  3. Once lukewearm, in a small dish; mix
  4. 1 Tablespoon dry yeast
  5. 1/8 cup warm water
  6. It will be thick but don't add water.
  7. Set aside.
  8. Measure
  9. 1 & 1/2 cups whole wheat flour
  10. 2 & 1/4 cups natural bread flour
  11. 1 Tablespoon coarsely ground walnuts
  12. 1 Tablespoon coarsely ground sunflower meats (seed)
  13. set aside.
  14. Placing yeast mixture into bowl with bulgar mixture, whisk it on low until all the yeast has been mixed in well/dissolved.
  15. Remove whisk attachment and add the dough hook.
  16. Pour in whole wheat flour and mix; add about 1/2 the bread flour and the nuts and sunflower seeds. Mix with dough hook; add rest of bread flour and knead in kitchenaide for about 5 minutes.
  17. Using more olive oil, grease bowl well and place dough into bowl, turning a few times to coat dough with oil.
  18. Cover bowl with a clean warm wet towel and place in warm draft free area for two hours to rise.
  19. Spray two bread pans with cooking spray, divide dough in half and shape into loaves and place into pans, place pans into cold oven for final rise.
  20. Be sure to rewet towel with hot water wring out and cover pans.
  21. In 90 minutes remove towel from over pans; turn oven on to 350 degrees F.
  22. Bake bread for 35 minutes then check to be sure it's done; if not, bake a few minutes longer.
  23. Once you have removed this bread from the oven coat top with butter to soften the top crust some. Allow to cool before slicing.
RECIPE BACKSTORY
Story behind this recipe is multiple fold. I have been trying to switch my family over to whole/natural foods. I asked and looked for recipes for whole wheat bread that all my family would like. A friend had given me a recipe for 100 % whole wheat bread that I wanted to try, but I could not find freshly ground cracked wheat anywhere, which the recipe called for. As a last option, which was a bulk food store, the proprieter talked me into trying bulgar wheat in its place. I bought some and tried it and it made the worst tasting brick of bread ever! Looking for a way to use this bulgar wheat, so as not to waste it, and preferrably to be able to use it for bread. I searched and made inquiries and couldnt find a recipe anywhere. As a last resort I decided to look up bulgar wheat and how to use it. While doing so I did find a recipe, but once I tried it, there still seemed to be something lacking ..so thru trial and error I finally came up with this recipe which reminds me of "healthnut bread" I have purchased from the grocery. My family loves it too and I know it is better a bread for them. But the best part is, it is soooo easy to make because it can be kneaded, all it needs to be, right in the kitchenaide. wooohoo!
