Bulgur - Lentil salad with avocado and feta

  1. Prepare the vegetable broth and let it boil. Add 30 grams of lentils per person. Let cook for 25-30 minutes, stirring occasionally. Add the bulgur during the last 10 minutes.
  2. Cut two onions in half fings and caramelize them in a pan with some butter. Let them cook for approximately 6-8 minutes or until they get golden. For the last 2-3 minutes add balsamic vinegar and a pinch of sugar. Move the opinions to a bowl and roast the almonds in the pan with the remainders and a little olive oil.
  3. Cut 2 avocados, 3 tomatoes, and approximately 100 grams of feta into small cubes. Chop the lettuce. Mix it all in a bowl with the juice of 1 lemon.
  4. Add the bulgur, lentils, caramelized onions, and almonds to the salad and drizzle some olive oil on top. Serve!
