Butter Fried Parsnips w/ Pomegranate Sauce

  • 2 large parsnips, lightly peeled and thinly sliced
  • oil
  • ½ cup flour
  • 1 t salt
  • ½ t pepper
  • ½ t dried marjoram or oregano
  • ¼ t cayenne pepper
  • 1/2 cup pomegranate juice
  • ¼ cup water
  • 1 T balsamic vinegar
  • 1 T sugar
  • dash each cinnamon and nutmeg
DIRECTIONS
  1. Coat parsnips with oil. Combine flour, salt, pepper, marjoram or oregano and cayenne pepper; toss with parsnips. Set aside.
  2. Bring pomegranate juice to a boil; simmer to reduce by half. Add water, balsamic vinegar, sugar, cinnamon and nutmeg; simmer 5 minutes until thickened.
  3. Saute parsnip slices in butter until browned, 5 - 6 mintues. Reduce heat to low, cover and cook until just tender, 4 - 5 minutes. Serve immediately drizzled with pomegranate sauce.
