Buttermilk Pancakes

  • 1 cup flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 egg
  • 1 1/8 cups buttermilk
  • 2 Tbsp butter, melted
DIRECTIONS
  1. Preheat and lightly grease a large skillet or griddle.
  2. Mix flour, salt and baking soda together in a bowl.
  3. Add the egg, buttermilk, and butter. Stir lightly only until combined. Batter should look thick and spongy.
  4. Drop batter by approximately 1/3 cup onto cooking surface. Cook until lightly browned on each side, about 1 to 2 minutes per side.
