Buttermilk Pecan Pie

- 1/2 cup (1 stick) butter
- 2 cups sugar
- 1 tsp vanilla
- 3 eggs
- 3 Tbsp flour
- 1/4 tsp salt
- 1 cup buttermilk
- 1/2 cup chopped pecans (add a few more if necessary to cover bottom of pie shell)
- 1 unbaked pie shell
DIRECTIONS
- Preheat oven to 300 degrees. In a large bowl, cream butter and sugar, adding sugar 1/2 cup at a atime, until smooth. Blend in vanilla. Add eggs, one at a time. Combine flour and salt in a very small bowl and add a small amount at a time to butter mixture. Add buttermilk and blend well.
- Sprinkle pecans in bottom of pie shell. Pour buttermilk mixture over pecans and bake 1 hour and 30 minutes. Best served at room temperature.
