Butterscotch Brownies

  • 2 (6 ounce) packages butterscotch morsels
  • 1/2 cup butter or margarine
  • 4 eggs
  • 1 cup firmly packed brown sugar
  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 1/4 teaspoons salt
  • 2 cups chopped pecans
DIRECTIONS
  1. Melt butterscotch morsels and butter in top of a double boiler over simmering water
  2. Remove from heat
  3. Combine eggs and sugar, beating at medium speed of an electric mixer until smooth and fluffy
  4. Sift together flour, baking powder, and salt
  5. Add to creamed mixture
  6. Stir well
  7. Stir in butterscotch mixture and pecans
  8. Pour into a lightly greased 15x10x1 inch jellyroll pan
  9. Bake at 350 for 25 minutes
  10. Cool completely in pan
  11. Cut into 2 inch squares
  12. Store in airtight containers
