Butterscotch Brownies
INGREDIENTS
- Cooking Time: 25 minutes
- Servings: About 3 doz
- Preparation Time: 20 minutes
- 2 (6 ounce) packages butterscotch morsels
- 1/2 cup butter or margarine
- 4 eggs
- 1 cup firmly packed brown sugar
- 1 1/2 cups all purpose flour
- 1 teaspoon baking powder
- 1 1/4 teaspoons salt
- 2 cups chopped pecans
DIRECTIONS
- Melt butterscotch morsels and butter in top of a double boiler over simmering water
- Remove from heat
- Combine eggs and sugar, beating at medium speed of an electric mixer until smooth and fluffy
- Sift together flour, baking powder, and salt
- Add to creamed mixture
- Stir well
- Stir in butterscotch mixture and pecans
- Pour into a lightly greased 15x10x1 inch jellyroll pan
- Bake at 350 for 25 minutes
- Cool completely in pan
- Cut into 2 inch squares
- Store in airtight containers
