Butterscotch Butter Pecan Cookies

  • 1 c. brown sugar
  • 1 c. sugar
  • ½ c. butter softened
  • ½ c. butter flavored shortening
  • 2 eggs
  • 2 c. rolled oats
  • 1 t. vanilla
  • 2 c. flour
  • 1 t. salt
  • 1 t. baking soda
  • 1 t. baking powder
  • ½ cup chopped pecans
  • 1-11 oz. package butterscotch morsels
DIRECTIONS
  1. Pre-Heat oven to 350 Degrees Fahrenheit.
  2. Cream together sugars, butter and shortening.
  3. Add eggs, vanilla and oats.
  4. In a separate bowl, combine flour, salt, baking soda and baking powder. Add to oats mixture 1/3 at a time and stir well.
  5. Add pecans and butterscotch morsels to cookie dough and stir well.
  6. Form into balls and bake on cookie sheet for 10 – 12 minutes or until cookies are golden brown.
  7. Makes 3 dozen.
