CHEESY TACO SOUP

INGREDIENTS
  • 2 lbs of ground turkey (or your choice of ground meat)
  • 2 gloves garlic minced
  • 1/2 cup of onion
  • 2 tbs cumin
  • 2 teaspoons chili powder
  • 1 packet of taco seasoning
  • 2 10 oz. cans of rotel (use plain diced tomatoes if you don't like spicy)
  • 2 cans of kidney beans
  • 2 cans of beef broth
  • 1/2 cup heavy whipping cream
  • 12 oz. cream cheese
  • salt and pepper to taste
DIRECTIONS
  1. In a crockpot, add the rotel, drained kidney beans, beef broth, and heavy whipping cream
  2. In a large pan, brown the ground turkey with the garlic and onion; drain.
  3. Add the cumin, chili powder, taco seasoning to the meat.
  4. Drop the cream cheese into the meat and stir until no more clumps
  5. add the meat mixture into the crockpot, stir and cook for 2 hours on low to absorb all flavors
  6. Serving suggestions: You can add cheese, sour cream, green onions, black olives, or anything for more taste
  7. Eat as a soup, or add tortillas to be more like a "dip"
