  • Chicken breast, cooked and sliced; or leftover roast or rotisserie chicken; or canned chicken
  • 1 lb. broccoli, fresh or frozen, cooked until tender crisp
  • 1 c. chicken broth
  • 1/2 c. milk or half and half
  • ½ c. sour cream
  • 3 T. cornstarch (30 calories per T.)
  • 1 c. shredded sharp cheddar cheese plus more for topping (110 calories per oz.)
  • freshly ground sea salt and freshly ground pepper to taste
  1. Layer the cooked broccoli into the bottom of a buttered casserole dish. Top with cooked chicken. Meanwhile mix chicken broth, milk or half and half, sour cream and cornstarch together in a sauce pan. Bring to boil and cook until thickened. Stir in cheese. Pour over top of casserole. Sprinkle additional cheese over top.
  2. Bake in an oven preheated to 350F for 20-30 minutes or until cheese is melted and casserole is bubbly. Serve immediately.
Our family often has roast or rotisserie chicken. Chicken Divan is one of my go-to recipes for using the leftover chicken. Our family loves it!
