CHICKEN NORMANDY

INGREDIENTS
  • 1 Tbsp. butter
  • 1 medium apple, peeled, cored
  • and sliced
  • 1 tsp. sugar
  • 1/4 c. apple juice
  • 4 whole chicken breasts,
  • skinned, boned and halved
  • (flatten slightly)
  • 2 Tbsp. brandy
  • 1/3 c. heavy cream
DIRECTIONS
  1. Melt butter or margarine in heavy skillet over medium
  2. heat. Add apple and sugar; cook until apple is just tender, 2
  3. to 3 minutes. Remove with slotted spoon. Add chicken to
  4. skillet and cook until golden, turning once, about 5 minutes on
  5. a side. Add apple juice and brandy; cover and cook over
  6. medium-low heat 15 minutes. Remove chicken; return apple to
  7. skillet with cream. Increase heat to medium-high and stir
  8. until slightly thickened, 5 to 8 minutes. Return chicken to
  9. skillet; spoon sauce over. (Serve immediately.)
  10. Note: Serve over rice, if desired.
