CHICKEN NORMANDY

INGREDIENTS
- 1 Tbsp. butter
- 1 medium apple, peeled, cored
- and sliced
- 1 tsp. sugar
- 1/4 c. apple juice
- 4 whole chicken breasts,
- skinned, boned and halved
- (flatten slightly)
- 2 Tbsp. brandy
- 1/3 c. heavy cream
DIRECTIONS
- Melt butter or margarine in heavy skillet over medium
- heat. Add apple and sugar; cook until apple is just tender, 2
- to 3 minutes. Remove with slotted spoon. Add chicken to
- skillet and cook until golden, turning once, about 5 minutes on
- a side. Add apple juice and brandy; cover and cook over
- medium-low heat 15 minutes. Remove chicken; return apple to
- skillet with cream. Increase heat to medium-high and stir
- until slightly thickened, 5 to 8 minutes. Return chicken to
- skillet; spoon sauce over. (Serve immediately.)
- Note: Serve over rice, if desired.
