CHOCOLATE CHIP ZUCCHINI BREAD / MUFFINS
INGREDIENTS

- 3 eggs
- 1 cup vegetable oil
- 2 cups sugar
- 2 teaspoons vanilla
- 2 cups shredded zucchini
- 1 (8 1/2 oz.) can crushed pineapple, well drained
- 3 cups flour
- 2 teaspoons baking soda
- 1/4 teaspoon baking powder
- 1 teaspoon salt
- 1 1/2 teaspoon ground cinnamon
- 3/4 teaspoon ground nutmeg
- 1 cup semi-sweet chocolate morsels
- 1 cup chopped walnuts
DIRECTIONS
- Combine eggs, oil, sugar, and vanilla; beat until smooth and thickened. Stir in zucchini, pineapple, flour, baking soda, baking powder, salt and spices. Fold in chocolate morsels and nuts. Spread batter into two greased 9x5x3 loaf pans. Bake loaves at 350F for one hour or until wooden toothpick comes out clean. Bake muffins at 350F for 20 – 30 minutes.
