CHOCOLATE ZUCCHINI CAKE

INGREDIENTS
  • 1/2 cup butter or margarine
  • 1 3/4 cups sugar
  • 2 eggs
  • 1/2 cup oil
  • 1 tsp vanilla
  • 1/2 cup sour milk (Add 1 tsp vinegar or lemon juice to 1/2 cup
  • milk and stir)
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 6 tbsp cocoa
  • 1/2 tsp salt
  • 2 1/2 cups flour
  • 1 tsp cinnamon
  • 2 cups shredded zucchini
  • 1/2 cup chocolate chips
  • 1/2 cup chopped walnuts
DIRECTIONS
  1. Cream butter and sugar until light and fluffy. (The butter should be just room temperature and the mixture should be very well creamed to insure a light textured cake)
  2. Beat in eggs, oil, vanilla and milk.
  3. In a separate bowl, combine baking soda, baking powder, cocoa, salt, cinnamon and flour.
  4. Add to creamed mixture.
  5. Stir in zucchini.
  6. Spoon batter into a greased and floured 9X13 inch pan. (If you use cocoa instead of flour for this step, you will have a nicer look to the slices and it also adds flavor to the cake)
  7. Sprinkle with chocolate chips and nuts.
  8. Bake for 40 to 50 minutes or until a toothpick inserted into center comes out clean.
