CUCUMBERS IN RICE VINEGAR
INGREDIENTS
  • 1 Hothouse Cucumber, peeled and thinly sliced
  • ¼ cup Seasoned Rice Vinegar*
  • Salt to taste
DIRECTIONS
  1. Combine all ingredients and let stand for a minimum of 15 minutes in order to allow the cucumbers to “sweat”.

Cooks Note: Amount of Rice Vinegar used is a matter of personal taste, but use enough to ensure that all of the slices of cucumber are coated with vinegar.
