CURRIED CHICKEN WITH AVOCADO

INGREDIENTS
  • 1/3 c. butter
  • 2 Tbsp. minced onion
  • 1 stalk celery, diced
  • 1 tart apple, peeled and diced
  • 5 Tbsp. flour
  • 1 Tbsp. curry powder
  • 1/4 tsp. garlic powder
  • 1/2 tsp. dry mustard
  • 3 whole cloves
  • 4 tsp. chicken stock base
  • 2 1/2 c. hot water
  • 1/4 c. cream
  • 2 Tbsp. chutney
  • 4 large, firm but ripe
  • avocados
DIRECTIONS
  1. Broil chicken on grill 5 to 6 inches above coals,
  2. turning occasionally. Meanwhile melt butter in large skillet
  3. or saucepan. Add onion, celery and apple; cook about 10
  4. minutes, stirring occasionally. Mix together flour, curry
  5. powder, garlic powder and dry mustard; stir into apple mixture
  6. along with cloves. Dissolve seasoned chicken stock base in
  7. water and stir into apple mixture; cook, stirring, until sauce
  8. thickens. Reduce heat and simmer 30 minutes, or until chicken
  9. is cooked through. Remove chicken from grill and place in
  10. large, rimmed serving dish. Peel and pit avocados; slice into
  11. 4 or 6 pieces each. Arrange pieces between chicken parts.
  12. Pour apple mixture over all. Serve with rice and a carrot,
  13. apple and walnut salad.
