Cajun Shrimp

INGREDIENTS
  • Servings: 6
  • 1 cup long grain rice, cooked
  • 3 onions, sliced
  • 2 cups chopped celery
  • 3 to 4 tbsp bacon drippings
  • 2 tbsp flour
  • 1 tsp salt
  • 1/8 tsp pepper
  • 2 tsp chili powder
  • 1 1/2 cups water
  • 2 cans Rotel
  • 3 cups frozen peas, cooked and drained
  • 1 tbsp white vinegar
  • 2 tsp sugar
  • 3 cups cleaned cooked shrimp
DIRECTIONS
  1. In a skillet over low heat, brown onion and celery in bacon drippings.
  2. Blend in flour and seasonings; add water slowly, stirring constantly.
  3. Continue cooking over low heat until thickened. Add remaining ingredients and continue cooking for 10 minutes longer, until shrimp are heated through.
  4. Serve with rice.
