Cantaloupe Bread

  • 3 eggs
  • 1 c. oil
  • 2 c. sugar
  • 3 tsp. vanilla
  • 2 c. pureed cantaloupe, (approximately 1)
  • 3 c. flour
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 3/4 tsp. baking powder
  • 2 tsp. cinnamon
  • 1/2 tsp. ginger
  • 1 c. chopped nuts, optional
DIRECTIONS
  1. Preheat the oven to 325. Grease and flour two 9 x 5 x
  2. 3" bread loaf pans. Sift together
  3. the flour, salt, baking soda, baking powder, cinnamon
  4. and ginger. Set aside. Beat
  5. the eggs. Then add the oil, sugar, and vanilla. Add
  6. the cantaloupe puree and mix.
  7. Add the dry ingredients to the wet ingredients. Pour
  8. into the pans and bake for 1
  9. hour or until a tester comes out clean.
