Cappuccino Meringue Kisses

  • 3 Large egg whites
  • 1 Cup sugar
  • 3 Tablespoons unsweetened cocoa
  • 1 Tablespoon dry milk
  • 1 Teaspoon instant espresso powder
  • 1 Teaspoon vanilla extract
  1. Use lowest setting for oven rack. Preheat oven to 325 degrees F. Line 2 sheet trays with parchment paper. Use an electric mixer to whip egg whites until fluffy and add sugar slowly. Continue to beat until whites are shiny and stiff. Sift cocoa, dried milk and espresso powder over whites. Add vanilla. Fold into egg whites. Prepare a plastic bag for piping by snipping off on corner. Pipe heaping Tablespoonful’s onto prepared cookie sheets, leaving 1 inch minimum between cookies. Bake until firm on outside, 30-35 minutes. Cool completely on baking sheets.
