Cappucino Muffins
INGREDIENTS
- Muffins
- 2 cups flour
- 1/2 cup sugar
- 1/2 cup packed brown sugar
- 2 tsp baking powder
- 2 tsp instant coffee
- 1 tsp cinnamon
- 1/4 tsp salt
- 1 egg
- 1 cup milk
- 1/2 cup butter, melted
- 1 tsp vanilla
- 1 cup mini semisweet choc chips
- Topping
- 6 tbsp flour
- 1/4 cup packed brown sugar
- 1/2 tsp cinnamon
- 1/4 cup cold butter
DIRECTIONS
- In large mixing bowl combine flour, sugars, baking powder, coffee granules, cinnamon and salt
- Whisk egg, milk, butter & vanilla - stir into dry ingredients until moistened
- Fold in chocolate chips
- Fill greased or paper lined muffin cups - 3/4 full
- Topping
- Combine flour, brown sugar & cinnamon in a small bowl - cut in butter to make coarse crumbs
- Sprinkle over batter
- Bake at 375F for 22-24 min - cool for 5 min before moving to a wire rack
