Caramel Apple Shots
  • 10 small Granny Smith Apples
  • 1 envelope Knox Gelatin
  • 1/2 cup Water
  • 1/2 cup Coconut Milk
  • 2 drops Yellow Food Coloring
  • 1 envelope Caramel Hot Chocolate (Regular is fine if you can't find caramel)
  • 1/4 cup Sugar
  • 1/2 cup Butterscotch Schnapps (or Caramel Vodka/Whiskey)
  • Lemon Juice
  1. *Half and hollow out apples cutting them from the stem down (a melon baller works well to hollow them out); after hollowed, squeeze with lemon juice to reduce browning
  2. *Mix 1/2 cup water with hot chocolate in a medium sized sauce pan; whisk to combine; add 1/2 cup coconut milk; whisk again
  3. *Sprinkle gelatin on top and let sit a few minutes
  4. *Turn on low-medium heat and mix gelatin until all is combined
  5. *Add 1/4 cup sugar and simmer slightly until sugar is combined
  6. *Add food coloring until you get the caramel color desired (2 drops usually does it)
  7. *Let mixture cool to warm; pour in 1/2 cup schnapps or vodka
  8. *Arrange apples to they fit tightly and secure on cookie sheet; pour caramel jello mixture into apple; refrigerate overnight
  9. *Cut halves into quarters and then in half again
  10. *Serve immediately
  11. *Trim brown off sides of apples that have browned too much
