Caribbean Sweet Corn & Vegtable Bake

INGREDIENTS
  • 2 Tbs olive oil
  • 2-1/2 tsp ground cumin( used a little less)
  • 1 tsp salt( did not use)
  • 3/4 tsp sugar( did not use)
  • 3/4 tsp dried thyme, crumbled
  • 1/2 tsp ground black pepper
  • 1/8 tsp red pepper
  • 4 ears of corn shucked( used canned as I did not have fresh)
  • 1 pound of plum tomatoes( about 6 quartered, about 2-1/2 cups)used 4
  • 12-oz small thin skinned potatoes about 4, cut into quarters( about 2-1/2 cups) used (1) very small red skinned potato.
  • 2 medium onions, cut into thin wedges( about 2 cups)
DIRECTIONS
  1. Oven set at 450( mine was set at 375)
  2. Mix together the oil, cumin, salt, sugar, thyme and both peppers. Mix well and add all vegtables. Toss. Place in a 15x10" roasting pan. Cover and bake for about 30 minutes. Stir once or twice during baking.
  3. Recipe suggests serving this with hamburgers~
