Carol's Red, White and Blue Dessert
  • 2 packages of cream cheese - softened
  • ½ cup sugar (I use Splenda and it comes out great)
  • ½ teaspoon vanilla extract
  • ½ teaspoon almond extract
  • 2 cups heavy whipping cream - whipped
  • 2 quarts of strawberries - halved and divided
  • 2 quarts of blueberries - divided
  1. In large bowl beat cream cheese, sugar, and extracts until fluffy. Fold in whipped cream. Place a third of the mixture in a 4 quart bowl.
  2. Layer a third of the berries over cream cheese mixture. Top with another third of the cream cheese mixture and another third of the berries. Spread the remaining cream cheese mixture over the berries. Arrange the remaining berries on top. Let your inner artist come out and make a unique design. Or be patriotic and make the flag (see below***)
  3. *** If you want to make the “flag” - reserve 20 strawberry halves and ½ cup of blueberries. After adding the last layer of cream cheese arrange the fruit in a flag pattern. And ENJOY!
  4. (I found this recipe for 4th of July years ago, but I make it for all our family get togethers. The original recipe calls for a “flag” arrangement on top, but I only did that once. Now I just put whatever design happens to be in my head at the time. I have also made it with other berries. Try it frozen, my brother says it’s even better.)
