Carrot Cake with a Hint of Orange

INGREDIENTS
  • 2 cups flour
  • 2 tsp. baking soda
  • 2 tsp. baking powder
  • 2 tsp. cinnamon
  • Dash of nutmeg
  • 1/2 tsp. salt
  • 4 eggs @ room temp
  • 3/4 cup oil
  • 3/4 cup sugar
  • 2/3 cup packed brown sugar
  • 1/2 cup orange marmalade
  • 1/2 cup orange juice
  • 3 cups finely grated carrots
  • 3/4 cup chopped walnuts
  • Orange Cream Cheese Frosting:
  • 32 oz. cream cheese @ room temp
  • 2 cups sifted 10x
  • 1 1/4 cup orange marmalade
  • 6 Tb. unsalted butter @ room temp
  • 2 tsp. fresh orange zest
DIRECTIONS
  1. Grease 2 9" round pans; preheat oven to 350.
  2. Sift together dry ingredients.
  3. Beat together oil & sugars; beat in eggs; beat in marmalade & juice.
  4. Add dry ingredients, mixing just until combined.
  5. Stir in carrots, then nuts.
  6. Bake apx. 40 minutes @ 350. Cool fully on rack before icing.
  7. Frost with Orange Cream Cheese Frosting
