Carrot Cake with a Hint of Orange
INGREDIENTS
- 2 cups flour
- 2 tsp. baking soda
- 2 tsp. baking powder
- 2 tsp. cinnamon
- Dash of nutmeg
- 1/2 tsp. salt
- 4 eggs @ room temp
- 3/4 cup oil
- 3/4 cup sugar
- 2/3 cup packed brown sugar
- 1/2 cup orange marmalade
- 1/2 cup orange juice
- 3 cups finely grated carrots
- 3/4 cup chopped walnuts
- Orange Cream Cheese Frosting:
- 32 oz. cream cheese @ room temp
- 2 cups sifted 10x
- 1 1/4 cup orange marmalade
- 6 Tb. unsalted butter @ room temp
- 2 tsp. fresh orange zest
DIRECTIONS
- Grease 2 9" round pans; preheat oven to 350.
- Sift together dry ingredients.
- Beat together oil & sugars; beat in eggs; beat in marmalade & juice.
- Add dry ingredients, mixing just until combined.
- Stir in carrots, then nuts.
- Bake apx. 40 minutes @ 350. Cool fully on rack before icing.
- Frost with Orange Cream Cheese Frosting
