Carrot Cake

  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 1/2 cup oil
  • 2 cups sugar
  • 4 eggs
  • 2 cups finely grated carrots
DIRECTIONS
  1. Add one egg at a time (total of 4 eggs).
  2. Beat well after each addition.
  3. Gradually add dry ingredients, mixing well.
  4. Add 2 cups finely grated carrots.
  5. Mix well.
  6. Turn into 3 greased and floured 8" layer pan.
  7. Bake at 350F for 50-60 minutes.
  8. Cool and frost with cream cheese nut icing.
