Carrot Cake

  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 1 tsp salt
  • 3 eggs
  • 1 c. oil
  • 2 c. sugar
  • 2 tsp vanilla
  • 18 oz. can crushed pineapple
  • 3 c. grated carrots
  • 1 c. walnuts, chopped
  • 3.5 oz grated coconut
DIRECTIONS
  1. Mix all. Cook on 350 F for 45 mins.
