Carrot Muffins

  • 2 cups flour
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • ¼ tsp salt
  • ¾ cup sugar
  • ¾ cup vegetable oil
  • 3 eggs
  • 2 cups grated carrots
  • ½ cup pecans
  • ½ cup raisins
  • 2 tsp vanilla
  • 1 apple, peeled, cored and chopped (1 ¾ cup
DIRECTIONS
  1. Preheat oven to 400 degrees. Grease ten muffin cups.
  2. In a medium bowl mix flour, baking soda, cinnamon, and salt
  3. In large bowl, combine, sugar, pil and eggs. Mix until well combined. Stir in carrots, pecans, vanilla, and apple. Fold in flour mixture.
  4. Spoon evenly into muffin cups (filled to the top).
  5. Bake for 20 minutes
