Carrot-Potato Kugel
INGREDIENTS
  • Servings: 6 servings
  • 2 C grated pared potatoes
  • 1 C grated pared carrots
  • 1/3 C grated onion
  • 1 tsp salt
  • 1/8 tsp pepper
  • 1/2 C unsifted flour
  • 3 T cooking oil
  • 2 eggs, beaten
DIRECTIONS
  1. Oven Directions:
  2. Combine in mixing bowl potatoes, carrots, onion, salt, pepper, flour, and oil.
  3. Mix thoroughly.
  4. Stir in eggs and mix well.
  5. Spread mixture in greased 8” square baking pan.
  6. Bake at 350 degrees for 40 minutes, or until wooden pick inserted in center comes out clean.
  7. Cut in squares.
  8. Serve hot.
  9. Microwave Oven Directions:
  10. Use ingredients listed in basic recipe.
  11. Prepare as for oven.
  12. Spread mixture in greased 8” square glass baking dish.
  13. Cover with wax paper.
  14. Microcook on high 10 to 11 minutes, or until wooden pick inserted in center comes out clean, giving dish a quarter turn twice.
  15. Let stand 5 minutes.
  16. Cut into squares.
  17. Serve hot.
