Carrot cake with pineapple

  • 2 cups grated carrots
  • 1-1/2 cupo veg oil
  • 1-1/2 cups chopped nuts
  • 1 small can crushed pineapple with juice
  • 3 eggs
  • 3/4 cup coconut
  • 2tsp baking soda
  • 1 tsp. cinnamon
  • 2tsp. vanilla
  • 1/2tsp salt
DIRECTIONS
  1. Mix all dry ing. add carrots oil and pineapple and eggs grease pby 13 inch pan pour bater in pan bake at 350 for 1 hour. When colled frost with cream cheese frosting
  2. 4 0z cream cheese
  3. 2 cups powdered suger
  4. 1/4 c butter or marg. beat well and frost cake
