Carrot cake with pineapple

- 3 cups flour
- 2 cups suger
- 2 cups grated carrots
- 1-1/2 cupo veg oil
- 1-1/2 cups chopped nuts
- 1 small can crushed pineapple with juice
- 3 eggs
- 3/4 cup coconut
- 2tsp baking soda
- 1 tsp. cinnamon
- 2tsp. vanilla
- 1/2tsp salt
DIRECTIONS
- Mix all dry ing. add carrots oil and pineapple and eggs grease pby 13 inch pan pour bater in pan bake at 350 for 1 hour. When colled frost with cream cheese frosting
- 4 0z cream cheese
- 2 cups powdered suger
- 1/4 c butter or marg. beat well and frost cake
