Carrots with Tahini Dressing

  • 3 pounds carrots, sliced
  • 1/4 cup lemon juice
  • 1/4 cup tahini
  • 1/4 cup olive oil
  • 2 tablespoons water
  • 2 minced garlic cloves
  • kosher salt
  • 2 tablespoons chopped parsley
DIRECTIONS
  1. Steam carrots until tender, 6 minutes; cool slightly. Whisk together lemon juice, tahini, olive oil, water, garlic and salt; toss with carrots and parsley.
  2. NOTE: Steam carrots and make dressing ahead. Bring carrots to room temp; toss w/ dressing and parsley.
