Cashew Sour Cream

  • 1 cup raw cashews, soaked for 24 hours
  • 1/4 teaspoon salt
  • 2 teaspoons apple cider vinegar
  • 2-3 tablespoons lemon juice (about 1 lemon)
  • 1/4-1/2 cup water, maybe more
  1. 1. Soak cashews overnight (there are other ways to do this like boiling for 10 minutes and draining, but soaking overnight will give you a better result).
  2. 2. Drain cashews and blend with the remaining ingredients until smooth.
  3. *Tasty Tip: Adjust the lemon juice and water to your desired taste & consistency
