Caspar and Zahra's favourite Anzac Biscuits (Australian, slightly healthier version)

  • 1 cup coconut flour (or plain flour)
  • 1 cup gluten-free rolled oats (or regular rolled oats)
  • 3/4 cup coconut - raw shreds (or desiccated)
  • 3/4 cup coconut flower sugar (or caster sugar)
  • 125g butter
  • 1 tablespoon golden syrup
  • 1.5 teaspoons bicarbonate of soda
  • 2 tablespoons boiling water
  1. Preheat oven to 150°C
  2. Brush trays with melted butter or oil
  3. Place flour, oats, coconut and sugar in large mixing bowl, stir until combined
  4. Combine butter and golden syrup in small pain, stir over high heat until melted
  5. Mix soda with boiling water, add to melted butter and syrup
  6. Add to flour mixture, stir until combined
  7. Shape into balls and slightly flatten onto tray about 6cm apart
  8. Bake 15-20 mins until golden and crisp
  9. Remove from oven, stand 2 minutes
  10. Loosen biscuits and cool on rack
