Caspar and Zahra's favourite Anzac Biscuits (Australian, slightly healthier version)
INGREDIENTS

- Preparation Time: 20 minutes
- 1 cup coconut flour (or plain flour)
- 1 cup gluten-free rolled oats (or regular rolled oats)
- 3/4 cup coconut - raw shreds (or desiccated)
- 3/4 cup coconut flower sugar (or caster sugar)
- 125g butter
- 1 tablespoon golden syrup
- 1.5 teaspoons bicarbonate of soda
- 2 tablespoons boiling water
DIRECTIONS
- Preheat oven to 150°C
- Brush trays with melted butter or oil
- Place flour, oats, coconut and sugar in large mixing bowl, stir until combined
- Combine butter and golden syrup in small pain, stir over high heat until melted
- Mix soda with boiling water, add to melted butter and syrup
- Add to flour mixture, stir until combined
- Shape into balls and slightly flatten onto tray about 6cm apart
- Bake 15-20 mins until golden and crisp
- Remove from oven, stand 2 minutes
- Loosen biscuits and cool on rack
