Cattle King Potatoes
  • Servings: 8-10
  • 3 lb potatoes 2 egg yolks
  • 1 clove garlic ½ C cream
  • Salt to taste ¼ C minced parsley
  • ½ lb mushrooms
  • pepper to taste
  • 1/3 C butter, divided
  1. Peel potatoes and cut in uniform size; boil with garlic and salt until tender. Meanwhile, slice and sauté mushrooms in 1 T of butter. Mash potatoes with remaining butter. Beat egg yolks with cream. Mix into the potatoes along with the mushrooms and parsley. Add more salt if necessary and pepper to taste. Pile in butter baking dish and bake at 375 until brown. Serves 8 to 10
