Cauliflower and cheese casserole
INGREDIENTS
- Cooking Time: 15-20

- 2 tbsp butter
- 1 onion, halved and sliced
- 1 cup bacon, cubed
- 750g cauliflower, cut into small pieces around ½ inch
- Sauce
- 2 tbsp butter
- 1 cup heavy cream
- 1 tbsp cream cheese
- 2 cups cheese, shredded (i prefer cheddar)
- salt and pepper to taste
- Topping
- 3-4 slices of cheese
DIRECTIONS
- Preheat oven to 480 degrees Fahrenheit
- Cook cauliflower for about 5 minutes, then set aside
- In a large pan, melt butter
- Add onions and cook for about 1-2 minutes
- Add bacon cubes and cook for another 2 minutes
- Set aside
- In the same pan, melt butter for sauce
- Add cream, cream cheese and cheese and cook until completely melted and uniform
- Season with salt and pepper
- Add onions, cauliflower and mix well
- Transfer to an oven safe dish and top with cheese slices
- Bake for about 7 minutes
