Cauliflower and cheese casserole
INGREDIENTS

  • 2 tbsp butter
  • 1 onion, halved and sliced
  • 1 cup bacon, cubed
  • 750g cauliflower, cut into small pieces around ½ inch
  • Sauce
  • 2 tbsp butter
  • 1 cup heavy cream
  • 1 tbsp cream cheese
  • 2 cups cheese, shredded (i prefer cheddar)
  • salt and pepper to taste
  • Topping
  • 3-4 slices of cheese
DIRECTIONS
  1. Preheat oven to 480 degrees Fahrenheit
  2. Cook cauliflower for about 5 minutes, then set aside
  3. In a large pan, melt butter
  4. Add onions and cook for about 1-2 minutes
  5. Add bacon cubes and cook for another 2 minutes
  6. Set aside
  7. In the same pan, melt butter for sauce
  8. Add cream, cream cheese and cheese and cook until completely melted and uniform
  9. Season with salt and pepper
  10. Add onions, cauliflower and mix well
  11. Transfer to an oven safe dish and top with cheese slices
  12. Bake for about 7 minutes
