Cauliflower mash

- 6 slices of bacon, cut into ¼ inch strips
- 4 cups cauliflower florets (about 17 oz)
- 4 tbsp cream cheese
- ½ cup parmesan cheese, grated
- 1 tbsp dried chives
- salt and pepper to taste
DIRECTIONS
- Cook cauliflower florets in lightly salted water, about 10 minutes
- In a frying pan, brown the bacon until crispy
- Drain cauliflower and put back in the pan to evaporate most of the water (this prevents the mash to become too watery)
- In a large bowl, mash the cauliflower to desired consistency
- Add cream cheese, parmesan and chives, mix well
- Add the bacon and mix
- Add salt and pepper to taste
