Cauliflower mash

  • 6 slices of bacon, cut into ¼ inch strips
  • 4 cups cauliflower florets (about 17 oz)
  • 4 tbsp cream cheese
  • ½ cup parmesan cheese, grated
  • 1 tbsp dried chives
  • salt and pepper to taste
  1. Cook cauliflower florets in lightly salted water, about 10 minutes
  2. In a frying pan, brown the bacon until crispy
  3. Drain cauliflower and put back in the pan to evaporate most of the water (this prevents the mash to become too watery)
  4. In a large bowl, mash the cauliflower to desired consistency
  5. Add cream cheese, parmesan and chives, mix well
  6. Add the bacon and mix
  7. Add salt and pepper to taste
Avoiding carbs, this gives you the same experience as mashed potatoes, healthier and very tasty.
