Cheddar Cheese and Rice Roll
  • 2 cups cooked UNCLE BEN'SĀ® ORIGINAL CONVERTEDĀ® Brand Rice
  • 3 cups grated low-fat Cheddar cheese
  • 3/4 cup fat-free cream cheese, softened
  • 1 can (4-1/2 ounces) green chilies, drained, chopped
  • 1/8 teaspoon hot sauce
  • 1-1/2 cups chopped walnuts
  1. PREP: CLEAN: Wash hands. Combine rice, Cheddar cheese, cream cheese, chilies and hot sauce. Mix by hand or in food processor. Shape mixture into a log. Roll in walnuts. Wrap tightly with plastic wrap and refrigerate 1 hour. SERVE: Serve with assorted crackers. CHILL: Refrigerate leftovers immediately.
