Cheddar and Ham Muffins
  • 3/4 cup low-fat sharp Cheddar cheese
  • 1/4 cup fresh grated Parmesan cheese
  • 1 3/4 cup reduced fat baking mix
  • 1 cup low-fat skim milk
  • 1/2 teaspoon black pepper
  • 1/4 cup low-fat ham, finely chopped
  • I add a pinch of garlic salt
  1. Mix cheeses, milk, and baking mix
  2. Add pepper and ham
  3. Mix well
  4. Spoon into lined muffin pans
  5. Bake at 400 degrees
  6. 12-15 minutes
  7. 9 muffins
