Cheese Enchiladas
  • Cooking Time: 20 minutes
  • Servings: 4-6
  • Preparation Time: 20 minutes
  • 1 lb grated mexican cheese mix
  • 12 corn tortillas
  • can canola spray
  • Enchilada sauce
  1. Spray tortillas lightly with spray
  2. Heat on meduim heat until soft
  3. Put some sauce in baking pan
  4. dip tortillas in sauce
  5. Put a handfull of cheese in middle of tortilla
  6. Tuck side into middle and roll
  7. Line them up in the pan
  8. Pour sauce over enchilads until it runs down the sides of the pan
  9. Sprinkle with some more cheese
  10. Bake at 400 degrees for 20 minutes
