Cheese Enchiladas

  • 2 cups of Shredded Mexican Cheese blend
  • 1 can medium red enchilada sauce
  • 20 corn tortillas or 10 flour tortillas
  1. Preheat oven to 350 degrees
  2. Spread a thin layer of enchilada sauce in bottom of 8x8 cake pan
  3. Layer tortillas in pan
  4. Cover tortillas in a layer of enchilada sauce
  5. Sprinkle with cheese
  6. Place tortilla on top of cheese
  7. Make sure last layer is cheese
  8. Repeat until layers reach top of pan (as the cheese melts the enchiladas will flatten)
  9. Bake in oven for 15 minutes or until cheese is melted
The quickest and easiest way to make cheese enchiladas! You can use any size pan and just use more cheese, sauce and tortillas as long as you layer. Great served with beans, rice and lettuce.
