Cheese Grits Souffle

INGREDIENTS
  • 1c. uncooked grits
  • 6Tb. milk
  • 3 eggs, beaten
  • 1/2c. butter, melted
  • 1/2lb. grated sharp cheddar (or any kind of cheese you happen to have)
DIRECTIONS
  1. Preheat oven to 400 degrees. Cook grits and remove from heat, let
  2. cool for 10 min. Add butter, milk, & cheese. Stir in eggs one at a
  3. time. Bake in a greased casserole dish for 1 hour.
RECIPE BACKSTORY
My mom made this all the time growing up. Being from the South, grits are a staple but this is a great change from the usual bowl of grits at breakfast. I have served this at brunch time as well as dinner (with shredded beef or pork barbecue and a green salad). Yum!
