Cheese Soup

INGREDIENTS
- 3 cans Fat Free Chicken Broth (low sodium)
- 2 bags frozen veggies (any type,
- broccoli, cauliflower, carrots,
- etc.)
- 1 Can Mild Rotel
- 10 oz block velveta light cheese
DIRECTIONS
- Put broth, rotel and veggies in pot, bring to boil, then simmer until cooked well (approx. 45 min)
- Cube up cheese into 1" cubes (or smaller) and drop in soup, continually stir until melted.
