Cheese and Bacon Potato Balls
  • 5 Baking Potatoes, Peeled And Diced
  • 1 Tbsp Butter
  • 2 Tbsp Milk
  • 4 oz Shredded Cheddar Cheese
  • 1 1/4 tsp Parmesan
  • 2 slices Bacon, Diced
  1. Oven Temperature: 350°F
  2. *Place the potatoes into a pot with enough lightly salted water to cover and bring to a boil; cook for 8 to 10 minutes, until tender and drain
  3. *While the potatoes are cooking, fry the bacon pieces in a skillet over med-high heat until browned, but not totally crisp
  4. *Mash the potatoes with the butter, milk, and cheese until fairly smooth - use a potato masher or a whisk
  5. *Mix in the bacon and form balls about the size of large ice cream scoops; place on greased baking sheet
  6. *Scrape the top and sides with a fork to make textured lines over the balls; sprinkle about 1 Tbsp parmesan cheese over the tops
  7. *Bake for 10 to 15 minutes, or until cheese is golden brown
