Cheese and Onion Empanadas
INGREDIENTS
  • Cooking Time: 20 minutes

  • 1 sweet onion
  • 1 Tablespoon olive oil
  • Pepper to taste
  • 2 cups mozzarella cheese
  • 1/4 cup parsley
  • 15 tapas (empanada shells)
DIRECTIONS
  1. Chop the onion into small pieces.
  2. Coat a small pan with olive oil and saute the onion over medium-high heat until soft. Season with black pepper.
  3. While the onion is cooling, grate the mozzarella cheese and chop the parsley into small pieces.
  4. Heat the oven to 400° F and spread parchment paper along a baking sheet. Fill the tapas with 1 Tablespoon cheese, 1 Tablespoon onion, and a hefty pinch of parsley. Seal the corners and bake for 20 minutes or until golden brown.
