Cheese and Onion Empanadas

- 1 sweet onion
- 1 Tablespoon olive oil
- Pepper to taste
- 2 cups mozzarella cheese
- 1/4 cup parsley
- 15 tapas (empanada shells)
DIRECTIONS
- Chop the onion into small pieces.
- Coat a small pan with olive oil and saute the onion over medium-high heat until soft. Season with black pepper.
- While the onion is cooling, grate the mozzarella cheese and chop the parsley into small pieces.
- Heat the oven to 400° F and spread parchment paper along a baking sheet. Fill the tapas with 1 Tablespoon cheese, 1 Tablespoon onion, and a hefty pinch of parsley. Seal the corners and bake for 20 minutes or until golden brown.
