Cheesecake Cupcakes

INGREDIENTS
  • 3 8-oz pkg cream cheese
  • 5 eggs
  • 3 Tbl vanilla
  • 1 8-oz tub sour cream
  • 1 1/2 c. sugar
  • can of pie filling of your choice
  • Cupcake holders with foil liner
DIRECTIONS
  1. Preheat oven to 350 deg.
  2. Mix 1 c. sugar and 2 Tbl vanilla with cream cheese. Add eggs. Beat until smooth. Line muffin tings with foil holders. Fill 3/4 way full of mix. Bake for 35-45 min.
  3. Mix sour cream with 1/2 c. sugar and 1 Tbl vanilla. Cool cupcakes, center will drop. Fill center with crea cheese mixture and bake for 5 minutes. Remove and cool. Top with fruit filling.
