Cheesy Chicken, Broccoli, and Rice

  • 1 lb chicken breast (I used 1 shredded rotisserie chicken)
  • 1 onion (diced)
  • 3 cups cauliflower rice (I used 1 bag frozen cauliflower rice)
  • 3 cups broccoli (frozen is fine)
  • 2 cloves garlic (minced)
  • 1/2 cup chicken broth
  • 1/2 cup cream cheese
  • 1 cup sharp cheddar cheese (grated)
  • 1 TBSP paprika
  • salt and pepper to taste
  1. Heat up a skillet and saute the chicken (if used raw), onion, garlic, paprika, salt, and pepper in a little bit of oil until the onions are translucent; about 5-10 minutes.
  2. Add the cauliflower, broccoli, and chicken stock and allow to cook for another 5-10 minutes, until the broccoli is cooked to your desired tenderness.
  3. Add the cream cheese and stir until everything is melted and combined.
  4. Take a bite and see if you need any more salt.
  5. Now, top with the grated cheddar and slide under the broiler until the cheese is melted, golden, and bubbly.
  6. Garnish as you like and serve.
