Cheesy Corn
INGREDIENTS
- 1 pkg frozen corn (I use 2 lb size)
- 1-1 1/2 pkgs cream cheese (the 8 oz size)at room temperature
- 1 cup finely shredded FIESTA cheese
- 1 T sugar
- 1/4 c. water
- Salt & Pepper to taste
DIRECTIONS
- In saucepan, combine water, frozen corn, sugar, salt & pepper. When corn appears to be thawed, add cream cheese. Stir until the cream cheese blends well, then add the shredded cheese.
- I usually put into a covered casserole on LOW heat until ready to serve.
- This recipe makes a lot...which is good when you have corn lovers in your family! This is a dish that is always requested at our family gatherings!
