Cheesy Hash Brown Casserole

  • Cooking Time: 30 minutes
  • 2 Tbsp butter
  • 1 can green chilies, diced
  • 2 onions, diced
  • 4 lbs diced frozen hash browns (2 large bags)
  • Salt & pepper
  • 2 cups grated sharp Cheddar cheese
  • 2 cups Monterey Jack cheese
  • 8 slices of bacon
DIRECTIONS
  1. Preheat oven to 375. Melt butter in a large skillet and sauté the chilies and onions until brown. Add the frozen hash browns, salt & pepper and toss together. Pour into a buttered baking dish and top with cheese and bacon. Bake until hot and bubbly. About 30 minutes.
